Hopper: It is used to control the operation of the refrigeration system through the thermistor , and control the temperature of the hopper between -0.5~6.5℃. It mixes the ice cream mix and temporarily stores the milk mix
Air/milk mixing pump: It is a key equipment. It transports the milk mix to the freezing cylinder, and its operation is controlled by a pressure switch. Generally speaking, air and liquid milk mix enter the mixing zone together according to their respective paths, and then enter the freezing cylinder through the conveying pipeline. The refrigerant is divided into two paths at the filter drier. One way enters the hopper evaporating through the main capillary tube, and the other enters the outer wall of the milk mix conveying pipe and the inside of the pipeline through the auxiliary capillary tube . Then proceed heat exchange and pre-cooling the milk mix entering the freezing cylinder to keep its temperature at about 4°C to ensure product quality and food safety.
Freezing cylinder: The inner surface of the freezing cylinder is its working facade. The milk mix and air are mixed and expanded, and then cooled up in the freezing cylinder to form a milkshake. After 7~11 minutes, the ice cream reaches the desired consistency and sent to the outlet, the product can be extruded by pulling down the handle. The standard temperature of ice cream is about -7~-8°C.
The scraper rack in the freezing cylinder: It is driven by the mixing motor through the gearbox and the transmission shaft,and used to mix the milk , so that the milk mixture is fully mixed with air.
It is worth noting that the soft ice cream is determined by the product's forming degree and viscosity, and the refrigeration system of the freezing cylinder is controlled by the electric current of the mixing motor. When the viscosity of ice cream slowly increases , the resistance of the mixing motor to the ice cream becomes greater and greater, and the current passing through the motor slowly increases. When the set value is reached, the compressor of the refrigeration system stops working, and the mixing motor also stops working.
